Oh this is a good one.
You’re never 100% sure, that’s for certain. There are always the go-to sites like Tastespotting or AllRecipes that contain recipes with a high chance of delectable success. Personally when I’m about to cook something I open at least 5-6 tabs of reference recipes for the same dish and then choose one by process of elimination by comparing the ingredients, cooking method and duration. I think if you’ve tasted a lot of different things and have some knowledge and experience in cooking this process becomes marginally easier. I guess you sorta have to picture the final dish in your head and then just wing it. It’s 50% research, 50% conviction.
