Making Cherry-Lychee Limeade

Is it still too cold for lemonades and limeades? It’s summer all-year long here in the equator (much to my chagrin, I miss winter) and today was a particularly hot day so making this was pretty justified. I had some doubts on whether cherry and lychee would make a good combination but took the risk anyway and just dump them in together - the result was pretty awesome, so do give this a try when the weather gets a little warmer.

Edit: Feel free to spike this with the spirit of your choice (I should write this in all my drink posts).

CHERRY-LYCHEE LIMEADE:

 [ 1 cup water + 1/3 cup sugar + 1 can of lychees in syrup, 1/4 to 1/3 cup of the syrup reserved + 1 cup cherry juice + 1/3  cup fresh lime juice (from 3-4 limes) +  2-3 cups cold sparkling or normal water + lime slices and mint or basil leaves for garnish]

In a medium saucepan, bring the water, lime juice, syrup from the lychees and sugar to a boil.

Reduce the heat and simmer, stirring occasionally, until the sugar dissolves. Remove from heat.

Let cool completely, then strain into a clean pitcher.

Into the pitcher with the lime juice-mixture, add in the cold sparkling or normal water.

Add in the cherry juice and stir well. Adjust sugar and lime juice to taste.

Garnish with lime slices and mint leaves.

Pour over glasses (or jars in this case) filled with ice, lychees, extra mint leaves and lime slices.
